bonusblog : dinner for three
as my mom is finishing school and my dad was out of town until tonight for business, they decided i should make dinner for the three of us...as some might be hesitant, i was excited. i thought long and hard what i should make, and came up with the perfect solution. as always, i looked towards celestial seasonings for some answers, and my eyes were drawn to the green tea poached fish (halibut in my case). to top the fish, i made another celestial seasonings green tea creation - green tea vinaigrette. trying to figure out some sides to go with it, i decided to recreate tapenade which i loved when i worked at opus (a fine dining restaurant in littleton, colorado) to spread over the foccaccia i have fallen in love with (i put out butter for conservative eaters too). next, thanks to celestial seasonings recomendation, i sauteed some scallions to garnish the side. my favorite vegetable, asparagus, was a vegetable i didn't have to hesitate to make. being my first time making fish, i must say it was tasty. there was no white wine to accompany this meal, however, it was a good meal for a pleasant summer night in colorado.
